You will need to choose whether to have private tuition or group lessons. Private tuition is more expensive but you do have 100% of the teacher's time, so you get quality time.
However some people prefer learning in a group – it is cheaper and it is often more motivational then learning on your own. You make mistakes and learn together and can make lifelong friends this way.
Make sure that you make a real effort to get out and about in the evening. Don't settle for supermarket ingredients and hiding away in your apartment! Go out and eat at local restaurants and immerse yourself with the locals. Try and pick places where only Italians eat. Sure you will make mistakes but that is part of the fun.
